Thanks for the suggestions guys. We will be heading to the top of loon on the gondola one day, and hiking around. We are going to go to lower falls on the Kanc one day, and probably hit up some local swimming holes and short hikes as well.
Lower falls is awesome, but it gets crowded on hot days.

Woodstock Brewery is decent. also, there are bunch of free things to see/do in that area and up around Cannon Mtn. I believe that you could take a gondola to the top of Loon, but I am not 100% sure about that.
Clarks Trading Post is fun even for adults if you want to do a super-touristy thing.

poplars suck. i used to have several, all have died. when they die, they die. and when they are dead, they don't stay standing very long. every single one of mine fell over before i could take them down. It looks as though they die at the root ball, because when the fall over, the root ball is very shallow, and there are hardly any visible roots
